San Joaquin is a farm that has been operated by the Pacas family since 1905. Rising 1700 meters above sea level at the Ayeco Mount located in Cantón Buenos Aires, Municipio de Chalchuapa in the Santa Ana region, this 30.97 hectare farm can be found. San Joaquin is also known as the ‘farm of the morning sun’ as it only receives sunlight through the morning hours (by noon the farm is shaded). This limited sun exposure allows the cherry to slowly ripen making for a very sweet coffee. Surrounding finca San Joaquin is a protected 10 hectare Cyprus forest that houses many endangered mammals, birds, and reptiles. The sandy loam soils of this hilly farm is planted with several different varietals, but this lot is solely Bourbon. Under strict supervision, this lot is naturally processed, meaning they dry the cherry with the fruit intact at the Vivagua mill. The coffee is dried on concrete patios for just over two weeks, with the staff tossing the cherry 5-8 times a day to ensure even drying. We love this coffee because it tastes like brownies, cherries, and has a wine-like undertone.
